Mexican Corn Dip

This delicious elote-inspired dip is a gameday gem that provides a tasty twist to traditional Mexican street corn.




No Nebraska tailgate is complete without at least one dish that features.... you guessed it: CORN! This quick and easy dip is a delicious spin on traditional Mexican street corn, and it will almost certainly become a staple in your gameday spread for many seasons to come!


Ingredients

  • 2 tablespoons butter

  • 4 cups of fire roasted canned sweet corn

  • 1 jalapeño (seeded & diced)

  • 3 tablespoons mayonnaise

  • 2 tablespoons crumbled cotija cheese

  • 2 tablespoons fresh cilantro (finely chopped)

  • 1 clove of minced garlic

  • ½ teaspoon chili powder

  • 1 lime (juiced)

Instructions

  1. In a large sauté pan, melt butter over medium-high heat. Add corn and diced jalapeño, and let it cook (stirring occasionally) for ~10 minutes until the corn is caramelized and slightly roasted / charred along the edges.

  2. Stir in mayonnaise, crumbled cotija cheese, cilantro, garlic, chili powder, and lime juice until evenly combined

  3. Serve immediately alongside tortilla chips

Great recipe. I subbed out the jalapeño for a can of mild green chilies to make it kid friendly.
